Food Incubator Manager

Summary of Position


Roux Carré is a food incubator located in the Central City neighborhood of New Orleans. Established in 2015, it is operated by Good Work Network (GWN), a small business development and technical assistance provider. Roux Carré’s purpose is to help minority food entrepreneurs launch viable culinary enterprises.

The Roux Carré Incubator Manager ensures that Roux Carré meets its mission of launching successful women and minority-owned food businesses by providing a fully licensed, approved and equipped commercial kitchen and dining venue. The Manager is responsible for the oversight of the program, and specifically duties as it relates to food programming and commercial kitchen operations. In addition, he/she will provide professional food industry technical assistance designed to improve participants’ business operations, market penetration, profit, and sustainability. This includes coordinating the development of a culinary curriculum for incubator participants, providing supervision to staff, and managing culinary events and catering. This position will be directly involved in providing critical insight to the Roux Carré program strategy directed by the Good Work Network organizationally.

Duties & Responsibilities


 Provide oversight of the Roux Carré Incubator program observing all policies and procedures and with strong communication with the Executive Director and Director of Business Development of Good Work Network.
 Achieve Roux Carré objectives in sales, service, quality, appearance of facility and sanitation and cleanliness through training of vendor incubator participants
 Create a positive, productive working environment for incubator participants, visiting event guests and customers
 Fully understand and comply with all federal, state, parish, and municipal regulations that pertain to health, safety, and labor requirements
 Prepare all required paperwork, including forms, reports, permits/licenses and schedules in an organized and timely manner
 Understand completely all Roux Carré policies, procedures, standards, specifications, guidelines, and training programs for the Roux Carré employees, incubator participants, event guests, and customers
 Ensure compliance among all incubator participants and event guest food handlers with the Louisiana Department of Health and Hospital (DDH) and New Orleans Board of Health (BoH) Codes and Rules. This includes the approved
ServSafe sanitation and safety principles and practices along with the Roux Carré policies and procedures in all kitchen areas and building
 Ensure all equipment is properly cleaned and properly functioning; schedule equipment repair and maintenance for commercial kitchen and overall facility including the open area, dining space, bathrooms, dumpster, parking lot and surrounding outside area of the building
 Oversee the operation and management of all equipment, utilities in the facility and commercial kitchen
 Build systems to maximize commercial kitchen efficiency
 Ensure all users keep the kitchen clean and organized at all times
 Fill in where needed to ensure guest service standards and efficient operations
 Ensure proper protocol is established to facilitate communication and resolution of complaints from customers, incubator participants, and outside vendors
 Assist the Director of Business Development in ensuring that the technical assistance provided to incubator participants responds to their needs, including:
 Building systems to maximize their incubator commercial kitchen efficiency
 Menu Design – Learning to prep on a larger scale
 Food/Recipe costing
 Sourcing product in the area
 Sales and Marketing – attract customers to increase sales and jobs
 Customer Service for repeat business
 Coach to achieve incubator sales goals for future business goals
 Work with the vendor participants to develop clear and intentional strategies to help them grow their business
 Trains all users of the kitchen on operations, safety, and maintenance
 Conduct regularly schedule meetings with vendor incubator participants focused on communication, team and vendor goals, achievement of goals, upcoming events, training, feedback, etc.
 Work in conjunction with Marketing and Communications Coordinator to develop and implement marketing and communications plans
 Be visible to welcome customers to promote a friendly environment and get them to engage on social media for shout outs to the Roux Carre
 Develop and maintain industry relationships
 Participate in development efforts, including fundraising and public relations
 All duties are subject to be modified or other duties added as needed for the Roux Carre’ by the Executive Director.

Qualifications:


 Bachelor’s degree in relevant field preferred
 At least 2 years of related professional experience in the food service/specialty food/restaurant business
 ServSafe Food Protection Manager Certification required
 Exceptional written and oral communication skills, including presentation and public speaking skills
 Highly organized with excellent time and project management skills
 Strong interpersonal and conflict resolution skills. Job requires constant interaction with vendor incubator participants, event guests to Roux Carre, GWN staff and community stakeholders
 Must be professional, friendly, and courteous
 Culturally competent with an ability to work with people of diverse socio-economic and ethnic backgrounds
 A passion for helping small businesses grow
 Demonstrated ability to be flexible and respectful
 Solutions-oriented thinker
 Be able to reach, bend, stoop and frequently lift up to 50 pounds
 Must have the stamina to work 45 to 50 hours per week
 Ability to drive a vehicle and must have proof of insurance and good driving record
